Day 5 of 30 Day Wheat Free Diet

30 Day Wheat Free Diet Day 5 This is it the day I can finally say my legs feel better. When I got out of bed my calves and Achilles were tight and achy but not as bad as usual. They quickly loosened up and felt normal. Throughout the day while at work they stayed almost entirely pain free. Today was a pretty rainy miserable day and a few times throughout the day I got these stabbing pains in my calves. This is not unusual for me and it normally happens when there is a major change in the weather, either a high or low pressure system coming in. These pains hit me in two places the calves and the wrists/forearms. Like I said the pain is a stabbing pain in the meaty part of my calf, but in the wrists it feels like it’s deeper into the bones. Today though I only got them a couple of times and only in my legs. They were subtle and passed quickly. Low Blood Sugar I have an issue with low blood sugar, my hands will get a little shaky and I’ll get a little grumpy when I’m hungry, but today it was very bad. I was preparing my lunch when my hands started shaking very noticeably; I had a jittery feeling that was almost overwhelming. Luckily I had some gluten free chips in the cupboard that I shoved into my mouth. This bought me enough time to get my lunch cooked.  By the time I finished my lunch the felling had almost completely faded. This was most defiantly not a good feeling, and in the past no matter how hungry I have been or how long I had gone without food I have never felt like that. Day 4 of 30 Day Wheat Free Diet

30 Day Wheat Free Diet Day 4 OK this is the day I was dreading when I started this wheat free diet, and decided to post about it every day.   So here goes. I feel about the same as I did yesterday. I knew posting about the changes going on in, (or to) my body would not change that much from day to day, and today proved it. I feel about the same as yesterday.   Headaches There are no headaches today, and that’s good, but that’s about it. Tendon Pain Same as yesterday Did you really think I was going to deviate from the story line . I still don’t know if I can say there is any improvement?   Amy’s Gluten Free Cheese Pizza with Rice Crust Amy’s Kitchen products can be found in almost any supermarket in America, but they make so many products you certainly won’t find them all. Amy’s has over a hundred gluten free products, and I plan on trying quite a few.   It’s a Crust Thing Pizza dough is made with high gluten flours; this gives the crust its ability to hold together even when stretched very thin. This pizza uses rice flour instead of wheat and as I expected it tasted nothing like a good doughy pizza crust. The crust is thin and I thought when it cooked it would hard like a cracker, but after cooking it was still soft. In the mouth it was crumbly and had a gritty texture like cornstarch. The sauce and cheese is very bland. I doctored up half the pizza with some provolone and parmesan cheese but the pizza was still pretty boring. When I tasted this pizza I thought it’s not great but I’d buy it again, but I’ve been shopping many times since and have never been moved to pick it up.  They do make a pizza with spinach and I will give that a try if I see...

Day 3 of 30 Day Wheat Free Journey

30 Day Wheat Free Diet Day 3 No gluten for three days, no problem? OK maybe a few. Today was my first day at home since starting this wheat free diet. I thought being home would make things easier since I’d be closer to my pantry of gluten free foods, but what I didn’t think about was all the temptations I’d be around as well. The cookie jar, the chips, muffins, etc. I want them so bad. Big Headaches Today the headaches are bad, before they seemed to be on the left side of my head, but today it’s both sides. I usually only take aspirin once or twice every few yearsYep every few years, but I had to take them today. The headaches were actually making it hard to think (OK harder than normal). I fought off the urge to take the aspirin as long as I could because I didn’t want to affect the monitoring of my other body aches. But by lunch time I couldn’t take it and gave in. Achilles Pain If I wasn’t on this diet, and thinking about my calf pains I wouldn’t think there is any improvement at all. But since I’m watching and waiting every day for some improvement I do believe there is some very, very slight improvement maybe this is the aspirin or just my mind tricking myself. Trying New Gluten Free Foods So far the most disappointing but not surprising thing about gluten free foods is bad pasta. So after the first two days of bad pasta dishes I spent today grilling chicken and making rice dishes for the week. I will have to work on some stronger sauces for my pasta, and then I’m sure things will improve. One good thing I discovered is that one of my favorite packaged rice dishes Vigo-Black Beans and Rice is gluten free. The label has no mention about gluten on it and the website for Vigo has been down for a few days, but celiac.com has a list of gluten free products from...

Day 2 of 30 Day Wheat Free Journey

30 Day Wheat Free Diet Day 2 Day two of my wheat free journey didn’t seem that much different than day one. Day two arrives without any of the apprehension I felt yesterday, plus the cravings or feelings of severe hunger stay away most of the day. On day one I thought the empty stomach feelings I had might be due to the fact that my body was in need of protein. So I made sure I had more for day two, But all day long at work the cravings never came, even before I ate the protein packed foods. Late at night though as I sat and typed this post they returned and wouldn’t go away no matter what I fed them; carbs or protein. Headaches I noticed late at night on day one that I had a slight headache but I didn’t think much of it. On day two the headaches came back in the same spot, on the side of my head by the temples. Today though they were much more pronounced and came and went most of the day. Tendon Pains The tightness in my Achilles seems the about the same, no real change. On the Bright Side My energy level all day was great. I’d almost say off the chart. I first noticed this as my legs wouldn’t stop bouncing. This also led to a much more alert feeling that lasted though out the day and night. I really hope this continues. All in all a good...
